Beginning in the 1930s, two successive generations of busy cooks used pressure cookers to prepare family meals. The next generation, with memories of valves dancing and hissing on stovetops, snubbed pressure cookers. Now pressure cookers have come back, those old valves replaced by modern versions that ensure safety while delivering the speed, ease, and nutritional benefits of pressure cooking. Pressure cooking also saves 70 percent of the energy normally consumed while cooking.

This heavyweight, stainless-steel beauty is a fine example of contemporary engineering and style. Its mirror finish gleams, and its black handles--including a loop handle for two-handed lifting--stay cool. Pressure-cooking traps steam to heat foods at temperatures higher than boiling. An aluminum disk in the base, sandwiched by stainless steel, speeds the process even more through fast heat conductivity. It's safe on electric, gas, ceramic, and induction stovetops. Little water is required, so nutrients, flavor, and color are not boiled away. Vegetables emerge vibrantly colored from the steamer insert. Stews, soups, beans--even meat loaf, pork chops, and desserts such as bread pudding--come out tasty and nutritious. (A booklet containing dozens of recipes is included.) You can brown meats in the pot before the lid is locked on, or use the pot without the lid. The stem of the operating valve shows high and low pressure so you can adjust heat for different foods. After cooking, the pressure can be reduced slowly (just let the cooker sit for a while), normally (press the pressure indicator), or quickly (run tepid water on the lid's rim).

Safety measures abound: the lid twists onto the pot; a rubber gasket ensures a tight seal. A vent releases steam if pressure builds too high, as does a valve that also locks the lid when any pressure whatsoever is inside the cooker. Cleanup is a bit involved: hand wash the pot, gasket, and lid with a mild detergent, then lightly oil the gasket. Normally the valve is self-cleaning, but if food passes through it, disassembly is required. Minor cleaning inconvenience, though, should not overshadow the major convenience of pressure cooking. --Fred Brack

Vrijwel elke organisatie is er op een of andere manier mee bezig. En vrijwel elke organisatie wil er op een of andere manier over vertellen. Ondertussen blijkt uit recent onderzoek dat het draagvlak voor duurzaamheid lijkt af te nemen en ook binnen ons kersverse kabinet - nota bene onder leiding van een premier die zichzelf ooit als 'groen rechts' betitelde - lijkt er weinig ambitie om vol voor verduurzaming te gaan. Is er sprake van 'MVO moeheid' of moeten we de boodschap anders formuleren? Op de Avond van de Duurzaamheid ging men op zoek naar het antwoord. Inspirerende experts laten hun licht schijnen op de beeldvorming rond duurzaamheid en gaven concrete tips over hoe het nog beter kan. Tips waar de deelnemers meteen mee aan de slag gingen tijdens pressure cooker sessies onder leiding van captains of industry. Daarnaast was er voldoende ruimte voor ontmoeting, tijdens het dinerbuffet en de afsluitende borrel. Sprekers Trendwatcher Tom Kniesmeijer vergeleek de tijdgeest met de cyclus van de seizoenen. Hij legde uit dat duurzaamheid één van de nieuwe paradigma's binnen de economie en de cultuur kán worden. Communicatie is daarbij essentieel. Het gaat er om de juiste toon te treffen, aansluitend bij de tijdgeest. Jeroen Meijering van marketingadviesbureau b-open vertelde over de totstandkoming en de conclusies van Dossier ...

Lotus Root Curry Ingredients Lotus Root - 1 lb (250 gms) Tomatoes - 1 lb (250 gms) Cilantro - few stems Green Chilli - 1 small Ginger root - small piece Cumin seeds/Jeera - 1/2 tea spoon Asofoetida/hing - a pinch Tumeric powder/haldi - 1/4 tea spoon Dry corriander powder/dhania - 1/3 tea spoon Garam Masala - a pinch Salt - 1/2 tea spoon Cooking oil - 2 tea spoon Water - 2 cups Process Wash the lotus root very well in running water. Peel the skin off. Cut into thin circular pieces as shown next. Wash again in fast running tap water. Cut tomatoes into small 1cm big pieces. Cut ginger, green chili and corriander into very small pieces. Heat 2 spoon oil in a pressure cooker on medim heat. When you see a few fumes add jeera seeds, after few seconds add hing. Stir. Add tumeric powder. Stir for few secs. Add dry corriander powder. Stir. Ensure spices do not burn. Add cut tomatoes, ginger, green chili and salt. Mix well. Let cook for 5 to 10 minutes on low-medium heat. Stir occasionally. Add cut lotus root pieces. Mix well. Cook on LOW heat for 4 to 5 minutes. Stir continuously. Add 2 cups of water. Mix well. Close the cooker lid. Cook on high-medium heat for about 10 minutes. Remove from heat. Let cool. Open the lid. Check if the lotus root is soft enough. Otherwise cook for another 5 minutes with lid closed. Add cut corriander leaves and a pinch of garam masala. Mix well. Offer to Sri Sri Radha and Krishna with Rotis.

Take about 100 gms of toor dall, wash it thoroughly,and add cut peices of tomatoes to it.. add about 250 ml of water and cook it in a pressure cooker for about 6 to 7 minutes. Remove from cooker and place on heater / stove and heat to a boil .. then add curry leaves, about one tea spoon full of salt and about two teaspoon full of rasam powder ( get it at any indian grocery ) ...heat to a boil ( dont boil for too long lest the flavour gets lost ) remove from flame and add lime juice ..about two table spoons and mix ...Then in a small ladle take about one teaspoon full of pure ghee, heat, and when hot, add 1/4 spoon of black mustard seeds, 1/4 spoon of jeera and a pinch of hing ( asafoetida ) .. add the hot contents to the rasam and mix well ..add chopped cilantro then EAT ! ( note: this rasam would be thick and you could alter the quantities of all the ingredients to suit your individual preference .. also it is best to make your own rasam powder ... and the tadka is very very important .. makes all the difference .. )

The cardoons are not used very often, but they lend themselves to many recipes, thanks to their delicate taste... you'll be pleasantly surprised! *** Today I'll suggest you a vegetarian recipe made with a not so common ingredient: the cardoons, au gratin. The cardoons have few calories and a sweet, delicate taste, similar to artichoke; if cooked in the right way, they can be a real delicacy. But let's see together what ingredients we'll need: • 2,2 lbs (1 kg) of cardoons • less than ½ cup (40 g) of grated parmesan cheese • 1 lemon • 2 tbsp of breadcrumbs • few knobs of butter • 1 tbsp of coarse salt For the béchamel sauce: • 1 cup (250 ml) of fresh whole milk • ¼ stick (25 g) of butter • 2 ½ tbsp (20 g) of flour • grated nutmeg • salt and pepper Let's make together the cardoons au gratin: Before cleaning the cardoons, rub your hands with lemon, since the cardoon tends to make your hands turn black, especially the fingers. So, cut off the base of the stem, that keeps together the bunch of cardoons, then remove and separate all the stalks, and trim any small leaves. If the cardoon is very big, cut into halves... lengthwise, then we'll remove the strings. With a small knife, nick the top of the stalk, and peel downwards to remove the strings. Do the same on the other side... it's more or less like peeling a celery. Once done, you can cut the cardoon into pieces... and soak in acidulated water ...
